Ingredients
For Dosa Batter:
Raw rice – 1 cup
Parboiled rice (idli rice) – 1 cup
Urad dal (black gram lentils) – ½ cup
Chana dal (optional, for crispiness) – 2 tbsp
Fenugreek seeds – ½ tsp
Water – as required (for grinding and consistency)
Salt – to taste
Oil or ghee – for cooking
For Potato Masala (Filling):
Potatoes – 3 medium (boiled and mashed)
Onions – 2 large (thinly sliced)
Green chilies – 2 (chopped finely)
Ginger – 1-inch (grated)
Mustard seeds – 1 tsp
Curry leaves – 8-10
Turmeric powder – ½ tsp
Chana dal (optional) – 1 tbsp
Salt – according to taste
Water – ½ cup
Oil – 2 tbsp
Coriander leaves – to garnish

🔹 Step 1: Prepare the Dosa Batter
Soak raw rice, parboiled rice, urad dal, chana dal, and fenugreek seeds in water for 6–8 hours or overnight.
Rinse them thoroughly.
Grind these ingredients together until smooth.
Drain water and make the mixture with a bit of water to smooth thick paste consistency.
Mix salt in well. Cover and allow it to ferment 8–12 hours in a warm spot until a little puffed up.

🔹 Step 2: Prepare the Potato Masala
Make oil hot in a pan. Mix mustard seeds and let crackle.
Add chana dal (if used) and fry till golden.
Add green chilies, curry leaves, and ginger. Sauté for seconds.
Add onions and sauté until slightly golden and soft.
Add salt and turmeric powder. Stir well.
Add boiled and mashed potatoes. Combine well.
Add ½ cup water and cook for 3–4 minutes till well mixed.
Garnish with coriander leaves and keep aside.
🔹 Step 3: Cook the Masala Dosa
Heat non-stick or cast-iron tawa (griddle). Lightly grease with oil.
Pour a ladleful of dosa batter in the middle and spread it in a circular motion to make a thin dosa.
Brush a small amount of oil or ghee on the sides. Cook on a medium heat until the bottom is golden brown.
Put a spoon of potato masala in the middle.
Fold the dosa and serve hot.
Serving Suggestions
Serve Masala Dosa with coconut chutney, tomato chutney, and sambar.
